Traditional Chicken Soup 

  1. Chicken stok - 200ml
  2. Maida - 10gm
  3. Butter - 20gm
  4. Cream -
  5. Onion - 1Nos
  6. Olive oil - 10ml
  7. Thyme - just little
  8. Chicken breast chopped - 10gm
  9. Parmesan chees - .05gm
  10. Parsley - .05gm
  11. Salt - for taste
  12. Pepper - for taste 

 

Method

Keep pan in very slow fire. Add 10 gm butter and maida make roux. When the roux get golden brown colour add the chicken stock mix it well and simmer for about 10 minutes. Pass the soup through a fine strainer.

Next we need to make a garnish for the soup. Heat a small pan, add olive oil, sliced onion and salt. Saute onions until golden brown (carmelised). Add thyme, chopped chicken and cook it well. Mix with soup along with cream, parmesan cheese and parsley. Check the seasoning of the soup garnish with parsley. Serve hot in a bread pot.
